There are a lot of ways to do sightseeing, but i think the best way to do it, would be on flight. It's a 40 minute flight, but i think it's worth to pay 350$ just for that. At
www.viator.com there are a lot of good reviews about this Seaplane flight. You can enjoy sightseeing with hot air balloon which is quite exciting.
You can travel with 4x4 trough Safari desert and sandboard too. I think it's great experience to go to Dubai.
